After opening Bird & Jim and growing our reputation we received a lot of requests for catering weddings offside and several groups wanting to rent out the restaurant for their private party.  Offsite catering was a great way to grow our business but was a challenging with our small kitchen.  Chef Ethan did his best and the team catered to many offsite weddings.  On occasion we did close Bird &Jim to the public for weddings yet this went against our concept of 7 days a week serving our community.  In 2019 the we used a local commercial Realtor to see if we could purchase the antique store across High from Bird & Jim.  This was a small building operated a few days a week July - September. Thom with Verses was able to broker a deal with the owners and we purchased the land and building that would help with our catering needs.  My goal was to build an event space with a catering kitchen; however, I didn’t want to construct a new building that would sit empty the majority of the time. I wanted to fill a need providing our visitors and community with a new cafe--serving fresh baked goods, sandwiches, pizza with quality coffee, juices and smoothies. At the time we really didn’t have many bakeries or quality pizza. This desire to continue to serve our community turned into the Bird's Nest Café.The Nest Above, open to cafe customers when not hosting an event is our second story accessible event space with stunning views of the Rocky Mountains.In 2020 plans halted along with life as we knew it as we all navigated the COVID pandemic. In 2021 McClain construction started the project removing the Antique Cottage and started building the Bird's Nest.  We opened in July 2022!
